To prepare tasty and most famous vegetable pappu charu, we need to take split red gram and clean it water. Then soak them in water for some time.
After the red grams are soaked enough, pour little water more than double the amount of the split red grams in a bowl and add soaked red gram to the water to boil it.
Pressure cooker may be used to boil the red grams. Boil upto 3 – 4 whistles.
Mean while, clean the carrot, bottle gourd, lady’s finger, drumsticks, onions, tomatoes and green chilies, then cut them into pieces.
Now soak the tamarind in water for some time and extract the juice.
After the red grams are boiled, take a big bowl and pour 3 – 4 tbsps of oil into it. Let the oil heat.
Once the oil is hot enough add mustard, jeera, and fry for half a minute.
Now add smashed garlic cloves, curry leaves to the oil and fry for half a minute.
Then add the onion and green chili pieces and fry for two minutes, then follow it with carrot, bottle gourd, lady’s finger, drumsticks, pieces and fry again for two minutes. Add the tomatoes at the end.
Once all the vegetables are cooked, pour the tamarind juice and 4 cups of water into the bowl, add cooked split red grams and boil for 15 minutes.
After 15 minutes, add turmeric powder, coriander powder, red chili powder and salt and boil for another 10 minutes.
Add coriander leaves at the end just 2 minutes before switching off the stove.
With this your tasty and famous vegetable pappu charu is ready to be served with hot rice.
Note : Vegetable pappu charu is consumed in combination with rice. It can also be served with Idly and Dosa.
