Uttapam or ooththappam or Uthappa is a dosa-like dish made by cooking ingredients in a batter. Unlike a dosa, which is crisp and crepe-like, uttapam is a thick pancake, with toppings cooked right into the batter.

Ingradients of Onion Uttapam
Rice 3 Units
Bengal gram (split) : 1 Unit
Fenugreek seeds : 1teaspoon
Salt : to Taste
Vegetable oil : As per need
Onion : 3-4 Finely chooped
Tomato: 2-3 Finely chooped
Coriander leaves: A bunch Finely chooped
Green chillies : 2-3 as per your need Finely chooped
Cut the above topping ingradients finely and keep aside.
Directions to prepare Onion Uttapam
Soak the ingredients Daal, Rice and Methi for 6-8 hours.
Grind it finely in a Grinder or Mixie in a semi solid state consistency.
Keep aside overnight to ferment for 6-9 hours depending on the climate( Summers 6 hrs, Winters 9-12 hours)
Heat a pan or tawa and brush oil over the pan and pour one small cup of batter in it and spread it over the pan
Add toppings immediately (see the topping ingredients below)
When edges are browning pour a tail of oil along the sides.
Turn it over and let it brown on the other side also
