Ingredients required to prepare Ulava Charu
Horse gram – ½ cup
Green chillies – 3
Onions – 1
Water – 6 cups
Tamarind – 10 – 15 gms
Ginger – small piece
Pepper powder – ¼ tbsp
Coriander powder – 1 tbsp
Mustard – ½ tbsp
Jeera – 1 tbsp
Dry Red chilli – 2
Curry leaves – 2 leaf lets
Coriander leaves – 1 bunch
Garlic cloves – 6
Salt – required amount
Oil – 2 – 3 tbsps
Directions to prepare Ulava Charu
First step in preparing ulava charu is to check the horse gram for contaminates and soak them over night.
Then cook the horse gram with water (Approx 5 – 6 cups).
After the horse gram is cooked, drain the water and keep it aside for later use.
Now peel the onion and clean it along with green chilies and slice them into pieces.
Take a bowl and fry dry red chili, jeera, and grind them into powder.
Then smash the ginger and garlic cloves. After that take the cooked horse gram and make it into paste.
Take the same bowl and add oil into it, let the oil heat. Once the oil is hot add mustard, jeera, curry leaves and fry for half a minute. Then add sliced onion and green and fry for another minute.
After that add the smashed ginger and garlic mix everything and follow it with cooked horse gram paste and tamarind juice extracted from soaked tamarind. Then add the water remained when horse gram was boiled.
Let everything boil for around 10 – 15 minutes.
Add coriander leaves at the end.
Now your tasty Ulava charu is ready.
Note : Ulava charu is very good with hot rice. This is also one of the famous recipes of Andhra cuisine.
About : Horse grams are rich in iron and proteins. They are low in fat content which helps in control of weight.
