Tuti Fruity Cake

Serving Size: 6

Ingredients:

  1. 2 cups – all-purpose flour/maida
  2. 1.5 cups – granulated Sugar
  3. 1/2 cup – tutti frutti
  4. 2 tbsp – unsalted Butter
  5. 3/4 cup – Milk
  6. 2 eggs – at room temperature
  7. 2 tsp – baking powder
  8. 1 tsp – baking soda
  9. 3 tsp – vanilla essence
  10. 2 tsp – cashews [just to sprinkle on top]

 

Directions:

  1. Preheat the oven to 180 degree C.
  2. Sieve flour, baking powder and baking soda twice and keep aside.
  3. Mix tutti frutti with a little flour, say 1-2 tbsp, and set aside.
  4. Combine butter and sugar – it will look like breadcrumbs.
  5. Add the eggs, one by one, to the sugar-butter mixture and mix well.
  6. Add vanilla essence and milk, and mix well.
  7. Next add the flour, baking powder, soda mixture. Mix until a creamy batter is formed without lumps.
  8. Fold in the tutti frutti.
  9. Grease a pan with butter and sprinkle with flour. Tap to remove excess.
  10. Pour the batter into the pan and bake for 35-40 mins until a tooth pick inserted comes out clean.
  11. Remove from oven, cool completely and then slice.
