Stir Fry Brinjal

Serving Size of Stir Fry Brinjal : For 2 People

This simple recipe is an indianized version of the Chinese stir fry technique. This is also a purely vegetarian recipe.

Ingredients for Stir Fry Brinjal :

1.White Brinjal:3

2. Chilly powder: 3 tea spoons

3. Salt: 2 tea spoons

4. Hing/Asafoetida: a pinch

5.  Vinegar: 1 tea spoon

Preparation for Stir Fry Brinjal :

  1. Cut the brinjal into small pieces
  2. Fry it in very hot oil
  3. Add salt , chilly powder, vinegar and hing to this
  4. Keep frying it till it is browned appropriately.
This dish takes hardly 5 minutes to prepare and can be used as a side dish for roti’s. Adding curd to this can become another variant of this dish for people who like curd based dishes.
