Shashlik or shashlyk is a type of Shiesh kabab. It is popular in Eastern and Central Europe, the Caucasus, Central Asia, the Baltic region in Northern Europe,  Afghanistan, Israel, Iran, Iraq, Morocco, Mongolia, Turkey, Pakistan  and in few areas on Indian sub continent. Shashlik means skewered meat which is of lamb in many places. This varies  according to regional preference. In some areas meat Shashlik  is famous. In other areas fat or vegetables such as onion,tomato, mushroom  or bell pepper are used in between meat chunks. The word Shashlik just means “skewerable”and word “shish” means skewer. Shashlik is common as a street food in urban Russia. It is cooked in outdoor using word charcoal or coal. Cooked during a social gathering in many English speaking countries.

In Iran, large chunks of meat for the preparation of Shashlik but in other areas meat cubes of medium size are only used. The meat needs to be marinate for a perfect taste. Here meat is marinate with the help of  dry wine, vinegar along with spices( Worcestershire sauce is used here) , herbs and onions for a great taste.

This is a ideal recipe for a barbecue party. Instead of lamb, this is the recipe of chicken Shashlik.

  • Half Kilogram cubed chicken of medium size.
  • Salt as per requirement
  • ½ teaspoon of finely crushed Black pepper.
  • 2 tablespoon of tomato sauce.
  • 2 tablespoon Worcestershire sauce
  • 1 table spoon of Ginger garlic paste.
  • ½ teaspoon of chili powder. You can adjust according to your spice tolerance
  • 2 Medium sized capsicum
  • 2 Medium sized onion
  • 2 Medium sized Tomato
  • 1 table spoon Olive oil.
For BBQ sauce
  • 4 table spoon vinegar
  • 4 table spoon tomato ketchup
  • 4 table spoon of tomato paste
  • 1 teaspoon of Garlic paste
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • ½ teaspoon of chili powder
  • 2 teaspoon of oil
  • Need BBQ grill
Preparation of meat and vegetables
  1. Meat should be medium sized cubes
  2. Slice the capsicum in to 3 cm pieces. Discard the seeds in the capsicum.
  3. Cut each onion in to 4 quarters and separate each of the layers.
  4. Remove the seeds from the tomato and make pieces of 3 cm each.
Marination of the chicken
  1. In a bowl mic the red chili powder,salt, tomato ketchup,fresh crushed black pepper,Worcestershire sauce,ginger garlic paste and make a paste out of it.
  2. Add cubed chicken pieces in to it ad mix well. Let it marinate for and hour or two.
Preparation of BBQ sauce
  1. In a bowl add garlic paste, tomato paste, ketchup, white vinegar,sugar and salt. Mix well to form a paste. BBQ sauce is ready
Final Grilling
  1. Skew the chicken and vegetables in a skewer
  2. Grill the chicken and vegetables. Brush olive oil in between to grease it.
  3. Once the color of the chicken starts changing, brush Worcestershire sauce on it
  4. Grill for a minute and brush with BBQ sauce. Grill for 5 minutes.
  5. Change the side and brush BBQ sauce again. Continue this process for another 8 or 10 minutes or till
  6. the chicken is melted properly and vegetables are grilled and soft
  7. Remove from the stove.
  8. Garnish it with fresh tomato, lettuce and lemon.
