Semiya Kesari (Vermicelli Sweet)

Serving size of Semiya Kesari : One small bowl per person

Ingredients required to prepare Semiya Kesari :

Vermicelli – 1 cup

Water – 4 – 5 cups(Instead of water milk can be added which is optional)

Food color (Orange) – 1/8 tbsp (optional)

Sugar – 1 ½ cup

Ghee – 4 tbsps

Cardamom powder – ¼ tsp

Cashews – 10

Raisins – 15

Directions to prepare Semiya Kesari :

  1. To prepare Semiya Kesari, first we need to take a pan and add ghee to it and let the ghee heat.

  2. Once the ghee is hot, add the vermicelli to it and fry it for 2 – 3 minutes. Then transfer the fried vermicelli to a different bowl and keep it aside.

  3. Fry the cashew nuts and raisins also in the ghee and keep them aside.

  4. Then pour 3 – 4 cups of water into a thick bottomed vessel and add orange food color to it and mix well. However, use of food color is optional.

  5. Then place the orange colored water filled vessel on the stove and let the water boil. Then add the fried vermicelli to the water slowly while stirring the water with the other hand.

  6. Then let the vermicelli cook for some time. Stir for some time while the vermicelli is being cooked.

  7. Once the vermicelli is almost cooked, add sugar and cardamom powder to the vermicelli and mix well.

  8. Let it cook for five more minutes and then add roasted dry fruits and raisins to it.

  9. Then switch off the stove and let the Semiya kesari settle for around ten minutes.

  10. Then serve it in small bowls.

Note : Semiya Kesari may be served as a sweet snack. It is usually served during marriage functions.

About : Semiya Kesari contains ghee and dry fruits which are good for health. It is good to include Semiya Kesari into your diet once in a while.
