Russian salad sandwich is a  pure vegetarian sandwich. It is a cold sandwich. Russian Salad Sandwich an apt snack during the summer. To ensure the pure taste of the Russian sandwich add fresh ground pepper powder and finely chopped pineapple which imparts a tangy feel to the sandwich. This is a light sandwich which is refreshing and contains vegetable. This is a great option for kitty parties, tiffin and kids who do not eat vegetables. Kids and adults will simply love this sandwich and here is the recipe.

Sandwich of a fine mix of vegetables in cream and mayo
  • ¼ cup of chopped carrot
  • ¼ cup of green peas
  • Quarter cup of french beans
  • ¼ cup of boiled and cubed potatoes
  • Quarter cup of chopped bell pepper/ capsicum both red and green mixed
  • ¼ cup of chopped /cubed pineapple.
  • ½ teaspoon of black pepper powder ( reduce to ¼ if you do not like the taste of pepper)
  • 8 slices of sandwich bread preferably brown bread
  • Salted butter for spreading
  • ½ cup mayonnaise
  • 2 tablespoon of fresh cream
For serving
  • Potato wafers
  • Tomato sauce /ketchup
  1. Boil the potato, chop it and keep it aside.
  2. Boil and blanch all the vegetables like green peas, chopped carrot, French beans and bell pepper/ capsicum pan using a cooker.
  3. Pressure cook the vegetables without immersing in water so that none of the nutrients are lost.
  4. Combine all the boiled vegetables like chopped carrot, green peas, bell pepper/ capsicum and French beans.
  5. Mix it with cubed pineapple, boiled and chopped potato, mayonnaise, fresh cream and black pepper powder.
  6. Russian salad is ready.
  7. Now take the sandwich bread and remove the brown edges using a knife and cutting board.
  8. Place two pieces of bread and spread the butter on it properly.
  9. Spread one portion of the Russian salad on a slice evenly.
  10. Sandwich the spread using another slice of bread with buttered face down.
  11. Now using a sharp knife cut it diagonally in to two equal portions.
  12. First pair of sandwich is ready
  13. Repeat till the spread is over by making more sandwiches.
  14. Serve it with Potato wafers and Tomato sauce /ketchup
You can replace mayonnaise with hug curd
