Melt the butter in a large sauce pan, add the onion and cook for about 5 minutes until soft and transparent.
Stir in the flour and cook for a few minutes.
Gradually add the chicken stock and cook until slightly thickened, stirring all the time.
Add the milk and bring to the boil, still stirring strain out lump if any. Boil again. Reduce heat and stir in the grated cheese, seasonings etc.
Heat gently just until the cheese has melted. Serve with crisp croutons.
Garnish it as per your choice
