Sev is a popular snack in Madhya Pradesh especially in parts of Indore and Ratlam. Sev is either used as a snack by itself or used a the part of every chat snack in Madhya pradesh. Ratlami sev is mainly made of chickpea flour and seasoned with ajwain, turmeric and fennel seeds and are deep fried. Sev is part an parcel of many snack recipes of North India. Many varieties of Sev are available and few famous ones are tomato Sev, laung (clove) sev, bhujia, plain sev, and palak sev.

Ratlami sev
Ingredients to prepare Ratlami Sev
Gram flour(Basen) – 250 gm
Oil – 2tps
Water – 3/4cup
Turmeric – pinch
Lemon juice – 1 tsp
Baking soda – pinch
Salt-to taste
Peppercorns – 20
Ajwain( Carom seed) – 1/2 tsp
Fennel seeds(Sauf) – 1 tsp
Cloves ( laung) – 15
Black salt (kala Namak) -1 tsp
Asafetida ( Hing) – 1 tsp
Ginger powder – 1 tsp
Chili powder (lal mirch) – 1 tsp
Directions to prepare Ratlami Sev
Take a pan dry roast pepper corns, fennel seeds, cloves, ajwain.
Take them and grind into fine powder, add them with black salt, asafetida, ginger powder, chili powder, mix them well and keep it aside.
Take water and oil , blend them with hand blender.
Add lemon juice to it and add the 2.5 tblsp of grinded spices to it and blend them again for 1min.
Now slowly add this mixture in gram flour and make a medium soft dough.
Grease your hands and sev mould with oil. Place the dough in sev maker with medium size net.
Heat the oil for deep fry. Now press the sev with sev maker into the heated oil, in concentric layers.
