Rice – 2 cups
Black gram – 1 cup
Bengal gram – 1 cup
Jaggery – 1 cup
Oil – required for deep fry
Directions required to prepare Purnalu :
To prepare Andhra famous Purnalu, we need to gather rice, black grams and red grams and clean them with water and soak for half day.
Then grind the rice and black gram together by adding some water. Make it into semi solid batter.
After that boil the soaked red grams and keep it aside.
Now take the jaggery and grate it with the help of a grater. Then add the grated jaggery to the boiled red grams and mix everything until it is made into a paste.
Now take a thick bottomed vessel and pour oil enough for deep fry into it. Let the oil heat.
While the oil is heating keep the dishes with batter and red gram jaggery paste near the stove.
Once the oil is hot enough, take the red gram and jaggery paste into your hand and make it into a small ball, then dip it in the rice batter and then transfer it to the hot oil.
Fry the purnam until it turns brown, stir it with a ladle so that it will not burn.
You may fry around five to six stuffed sweet balls at a time depending on the size of the vessel you are using.
Repeat the same process until the stuffing paste is finished.
Place the fried balls on tissue papers to absorb the excessive oil.
Transfer them to a plate and serve.
Note : Purnalu may be served as a sweet snack. They are usually prepare for festivals as offerings to gods.
About : Purnalu consists of cereals and pulses which are rich in carbohydratess and proteins. Hence it may be considered as one of the healthy foods.
