Pepper Chicken

Pepper Chicken is a slightly spicy chicken recipe mostly cooked in fresh grounded spices, onion and spicy black pepper garnished with curry leaves. This is mostly a dry dish(without much gravy)

Serving Size of the Pepper Chicken : 3

Ingredients for Pepper Chicken

Boneless chicken pieces, cubed : 250 gm

For Marinating:
Pepper Powder: ¼ tsp
Lemon Juice: 1 tsp
Salt: As per taste
For masala:
Onion Sliced : 1 Cup
Ginger :1 tsp grated or finely chopped.
Garlic Cloves: 2 Minced
Green Chilli: 1-2 Slited lengthwise ( or as per your spice tolerance
Black Pepper: 1 tsp
Garam Masala : 1.2 tsp
Fennel seeds : ¼ tsp (Saunf Optional)
Turmeric powder : ¼ tsp
Others
Soy Sause : 1 tsp
Tomato : ½ Cup sliced in to small Sices
Curry Leaves : 2 Twigs
Mustard seeds: 1 tsp
Oil : 2 tsp
Spices(Optional)
Corriander Seeds : 2 tsp
Red Chillies: 1-2 dry
Cinnamon : 3 Inch piece
Cardamom: 3 Green cardamom pods

Directions t0 prepare Pepper Chicken

1. Marinate the chicken with pepper powder, Salt and Lemon Juice
2. Heat the pan and add oil, Splutter mustard seeds, Add Onion as well as tomato and saute till translucent
3. Add rated/crushed ginger and garlic, green chilli and curry leaves and cook till the raw smell is gone ( Around 3-4 minutes)
4. Add crushed pepper, turmeric power, garam masala and fennel seed(fennel seed is optional)
5. Add Soya sauce( Optional ) and mix well
6. Add enough oil and cook so that the whole mix is in dark brown colour( Please make sure it is not burned , Stir frequently)
7. Add quarter cup of water and mix properly. Add the marinated chicken pieces. Cook for some time. Add enough water( ¼ to ½ cup) so that it is not burned at bottom and cook the chicken properly. Stir in between.
8. Once Chicken is cooked, keep in the flame so that excess  water is boiled out.
9. Roast the chicken for a while in low flame so that the whole thing has a brown colour
10. Garnish with Onion and add ¼ spoon of pepper  powder(Optional : If you really like the pepper taste you can add)

Note:

  1.  Chettinadu style of pepper chicken has coriander seeds( 2tsp) and Red chillies( 2 nos) added in the Step 2
  2. Cinnamon( 1 Inch piece) and Cardamom(3 pods) can also be added if you like it to have more oriental taste
