Serving Size: 4-6

  1. 1 cup Besan (Gram Flour)
  2. 1 cup Sugar
  3. 1 cup Fresh Ghee
  4. ¼ cup Water

  1. Roast the gram flour (besan) in a thick pan until you get a nice smell. This process takes around three minutes.
  2. Sieve the besan flour and keep it aside.
  3. Grease a plate with ghee and keep it ready.
  4. In the same pan, heat some water and add sugar and heat till you are able to get one string consistency.
  5. Once you get the consistency, add some ghee and slowly start adding the gram flour and keep stirring it continuously and ensure that there are no lumps.
  6. Keep stirring continuously till the whole mixture becomes quite thick and while doing this, you must keep adding some ghee in it repeatedly.
  7. When the mixture starts coming together, and you can see some bubbles on the sides of the pan, you can pour it in a greased plate and it starts spreading wonderfully on its own.
  8. You must now wait for the whole mixture to cool a little and then cut with a sharp knife when it is still warm.

  1. Use only freshly ground gram flour or fresh flour from the market.
  2. Roast the flour well till you get a good smell.
  3. Use only fresh ghee as it gives a very good flavor.
  4. The consistency of the sugar syrup is very important so you must wait till it reaches one string consistency.
  5. The consistency of the Mysore Pak is also very important. It must be thick and only then you can pour it in the pan. If it is not thick, you must heat it for a few more minutes and then pour it in the greased plate to set.
