Mixed Vegetable Bhajji or Mix Vegetable curry

Serving Size: 4

Ingredients:

  1. Potato-2 no’s
  2. French beans-250 gram
  3. Brinjal 100 gram
  4. Capsicum-1 no’s
  5. Onion-1
  6. Tomato-2
  7. Ginger-garlic paste-1 teaspoon
  8. Sabzi Masala Powder-1 teaspoon
  9. Red chilli powder-1/2teaspoon
  10. Turmeric powder-1/4 teaspoon
  11. Salt-As needed
  12. Oil-5 teaspoon
  13. Coriander leaves-1/2 bunch

 

Directions:

  1. Wash and clean all the vegetables and cut the veggies into small pieces. Take diced vegetables into pressure cooker along with some salt and cook for about 2 –3 whistle. you don’t need to add water while cooking veggies.
  2. Heat the oil into wok or kadhai and fry the onions till golden brown in color.
  3. Add chopped tomato, sabzi masala powder, red chilli powder, turmeric powder, ginger-garlic paste and cook it for about 5 minutes on medium flame.
  4. Then add cooked vegetables into wok and mix it well. Garnish with chopped coriander leaves and serve hot with chapatti or rice.
  5. Enjoy!!
