Meat Paste

  1. 1 lb beef, cheaper beef will do
  2. 2 slices lean bacon or more depending on size
  3. 2 1/2 ounces butter
  4. 1/4 tsp salt
  5. small tsp mace
  6. pinch cayenne
  7. sprinkling nutmeg, freshly ground of course
  8. 1 tbspn anchovy sauce



  1. Cut meat and bacon into small pieces and put in heatproof basin / bowl with rest of ingredients but do not cover basin (even when cooking) Have large pot boiling on stove but first make sure that water will only come halfway up the bowl. Put heatproof basin in pot put a lid on pot but not the basin. Steam in pot for approx 4 hours checking water level frequently adding boiling water as necessary. When done strain off liquid and keep, let cool down a little. When cooled enough put through the kitchen wizz and add liquid slowly, just enough to bind. 
  1. This can be stored in fridge for a reasonable amount of time although it only ever lasted a few days to a week in my home.
