Macaroon Sponge Cake

Ingredients

  1. 7 Large Eggs, separated
  2. 1 Large Egg
  3. 1 1/4 cups Granulated sugar, divided
  4. 1 cup Cake flour
  5. 3/4 cup Flaked coconut, toasted
  6. 1/4 cup Finely ground almonds, toasted
  7. 1 Tablespoon Vanilla extract or rum extract
  8. 1 tsp Almond extract
  9. 1/4 tsp Coconut extract
  10. 1 tsp Cream of tartar
  11. 1/4 tsp Salt

Glaze

  1. 1 cup Confectioners’ sugar
  2. 2 Tablespoons Water
  3. 1 Tablespoon Vanilla extract
  4. 1/2 tsp Almond extract

 

Procedure:

  1. Preheat oven, line an ungreased 10-inch fluted tube pan with parchment paper.
  2. Beat together egg yolks and whole egg at medium speed for 2 minutes. Add 2/3 cup sugar, beating until light and fluffy. At low speed, beat in the flour, coconut and nuts. Beat in all extracts.
  3. Using clean beaters, beat egg whites at high speed until foamy. Add cream of tartar and salt, beating until soft peaks form. Gradually add remaining sugar, beating until stiff peaks form, but no dry.
  4. Fold one third of beaten egg whites into egg yolk mixture. Fold in remaining white. Pour Macaroon cake batter evenly into prepared cake pan and smooth top.
  5. Bake Macaroon sponge cake until a wooden pick inserted near the center comes out clean.
  6. Invert pan over the neck of a bottle to cool completely. Loosen cake by running a metal spatula around sides of pan. Turn cake out onto a serving plate. Remove parchment paper.
  7. To prepare glaze, mix together confectioners’ sugar, water, vanilla extract and almond extract. Pour glaze over Macaroon cake.
