Traditional Bihari Litti Choka

Litti choka  is a traditional Bihari dish which is originated in the state of Bihar and Nepalese state of Madhesh. Litti along with choka is a complete meal with all the essential nutrients. This is a dough ball made with whole wheat and stuffed with sattu and other spices and herbs. It is normally roasted over wood fire and served with Ghee . It is best eaten with aloo bartha or baingan burtha accompanied with a generous portion of curd. Recently Litti chocka’s taste has been endorsed by many celebrities. Amanda Leigh “Mandy” Moore is an American singer-songwriter and actress recently tweeted about the taste of Litti choka to her follower base of 2.5 million. Aamir Khan, Amitab Bachan and many others have vouched for the taste of Litti choka during their promotional tour to Bihar.

Ingredients to prepare Litti Choka Recipe

For Litti

  1. Wheat flour  – 2cups
  2. Ajwain           – 1/2 tsp
  3. Salt                 – to taste
  4. Ghee              -2 tblsp

Ingredient for Filling Litti

  1. Sattu (Mixture of ground Pulses and Cereals)       -1 cup
  2. Garlic grated       – 3 – 4
  3. Onion                     -1 (medium size)
  4. Ginger grated       -1 inch
  5. Kalonji (Nigella sativa or black-caraway,  nigella or kalonji or black cumin)                   – ½ tsp
  6. Ajwain (bishop’s weed or carom)                   – ½ tsp
  7. Green chilis            – ½ tsp (chopped)
  8. Coriander leaves     -finely chopped
  9. Lemon juice            –1tsp
  10. Salt                            –to taste
  11. Red chili pickle     – 2 tsp

Ingredients for Choka

  1. Potatoes              – 2  (boiled)
  2. Brinjal (big)        -1
  3. Tomatoes             -3
  4. Garlic                   -4-5 cloves
  5. Green chilis         -2-4 ( finely chopped)
  6. Ginger                   -1/2” inch
  7. Onion                     -2 medium
  8. Mustard oil            -2tsp
  9. Salt                         –to taste

Directions to Prepare  Litti Choka

  1. Take a bowl add wheat flour, ajwain, salt and ghee. Mix well and knead it with water by adding little by little.Make a soft dough and rest it with wet cloth.
  2. For stuffing take sattu in a bowl add all spices including grated ginger, green chilis, coriander, lemon juice and grind it. The texture should be crumbled.
  3. Now take the dough make it into small ball and roll it into small chapathi size, don’t apply more flour to make chapthi.
  4. Take 2 tsps of sattu fillings and cover all around from all sides and make it like around ball.
  5. For this recipe we need oven, preheat the oven for 200 degrees.
  6. Place  the  ball on the dish tray and bake it for 30-40 mins flip on both sides for evenly bakingFfor making chokhas take boiled potatoes and roast the brinjal and tomatoes in oil and peel of the skin of brinjal
  7. Mash the potatoes,brinjal and tomatoes along with garlic together
  8. Add finely chopped onions,   grated ginger, coriander leaves, salt green chilis and mustard oil.
  9. Mix all the ingredients well and choka is ready
  10. Now take the baked litti and dip them in ghee and keep them aside
  11. Put the choka in a bowl and litti in melted ghee and serve with green coriander chutney.
  12. Litti can be broken through the center and ghee can pour on the top of the litti so that ghee can reach the stuffing
