Serving size of Kodiguddu Tomato Kura : 4
Ingredients required to prepare Kodiguddu tomato kura :
Eggs – 4
Onions – 2
Green chili – 5
Tomatoes – 4
Red chili powder – 2 tbsps
Coriander powder – 1 tbsp
Turmeric powder – ¼ tbsp
Curry leaves – 2 leaf lets
Mustard – ½ tbsp
Jeera – 1 tbsp
Pulses (Popuginjalu) – 1 tbsp
Garlic cloves – 5 – 6
Salt – required amount
Oil – 3 – 4 tbsps
Directions required to prepare Kodiguddu tomato kura :
To prepare Kodiguddu tomato kura , first we need to boil the eggs for about 20 minutes.
After the eggs are boiled, peel the shell and keep them aside.
Now peel the onions and clean them with water along with green chili and tomatoes.
Slice all the vegetables into pieces.
Now take a bowl and add oil into it and let the oil heat. Once the oil is hot add mustard, jeera, pulses, smashed garlic cloves, curry leaves and fry them for a minute.
Then add onions and green chili and fry them too for two minutes.
Once the onions are fried enough add the tomatoes and cook them for five to eight minutes.
Then add the turmeric powder, coriander powder, red chili powder and cook for two more minutes.
Now take knife and slit the eggs slightly and add the boiled eggs to cooked tomatoes. Mix everything properly for a minute.
The tasty Kodiguddu tomato kura is ready to be served.
Note : Kodiguddu tomato kura tastes very good with rice. It can also be consumed with chapatti.
