Kodiguddu Pulusu is an Andhra cuisine is an excellent side dish

 

Kodiguddu Pulusu or Egg Curry (Andhra style) recipe

Eggs are considered to be one of the most healthiest foods. They contain minerals like Calcium and vitamins such as A and B.
Ingredients
  • Egg - 4
  • Tamarind - 20 – 30 gms
  • Water - 2 cups
  • Onions - 1
  • Red chili powder - 1 – 2 tbsps
  • Mustard - ½ tbsp
  • Jeera - 1 tbsp
  • Turmeric powder - ½ tbsp
  • Dry red chili - 3
  • Coriander powder - 1 tbsp
  • Curry leaves - 2 leaf lets
  • Coriander leaves - 1 tbsp (Chopped)
  • Pulses (Popuginjalu) - 1 tbsp
  • Salt - required amount
  • Oil - 2 – 3 tbsps
Instructions
  1. To prepare kodiguddu pulusu, we need to boil the eggs in a bowl of water.
  2. After the eggs are boiled remove the shell and make four to five slits with a knife.
  3. Now, clean the tamarind and soak it in water.
  4. Peel the onions, clean them and chop it into pieces.
  5. Now take one more cooking bowl and add 2 - 3 tbsps of oil. Let the oil heat.
  6. Once the oil is heated, add mustard, jeera, pulses, dry red chilies, curry leaves and fry them for half a minute.
  7. Add the onions to the oil and fry them too for a minute.
  8. Now, prepare tamarind juice with 2 cups of water from the soaked tamarind and pour it into the oil and onion mixture and let it boil.
  9. After a minute or two, add the boiled eggs to the juice and boil everything for around 15 minutes in a low flame.
  10. Add turmeric powder, chili powder, salt and corainder powder at the end and bowl for five more minutes.
  11. Add coriander leaves at the end.
  12. With this your tasty kodiguddu pulusu is ready to be served
  13. Note : Kodiguuddu pulusu tastes very good with rice. Sugar or Jaggery may be added for sweet taste.
