Bitter gourd Chutney | Kakarakaya Pachadi

When I was a kid I use to wonder, who in the earth will ever eat anydish made of bitter gourd ( Kakarakaya in telugu)  which looks ugly and tastes bitter. As as time passes instead of simple taste, the nutrition value and other factors determines your liking. bitter gourd became one of my favorite. Bitter gourd curries are really not that bitter if you prepare it properly.There are many bitter gourd recipes which satisfy your taste palates.

Bitter gourd is proved to be nutritious and helps in recovering from many ailments

  1. Bitter gourd is a folk medicine for diabetes. it contains components similar to insulin and are called plant insulin. It is know to reduce the sugar levels.
  2. Bitter gourd is considered good and speed up the recovery for Piles, Blood Disorder, Respiratory Disorder, Alcoholism and Cholera.

Bitter gourd is also known as Balsam Pear or bitter melon. Bitter gourd is low in calories, contains high quantity of  dietary fiber, vitamins, anti-oxidants and minerals. It  contains Vitamin folate, vitamin-C and health benefiting flavonoids like zea-xanthin, a-carotene, lutein as well as ß-carotene. It eases digestion and help protects body from oxygen-derived free radicals which play role in aging and causes cancer.

Considering all these facts bitter gourd is a sweet panacea for may health disorders and good in taste if prepared properly. Below is the recipe of bitter melon chutney

 

Kakarakaya Pachadi | Bitter gourd Chutney

Ingredients
  • Bittergourd - ¼ kg
  • Onion - 1
  • Tomatoes - 3
  • Red chili powder - 3 tbsp
  • Mustard - ¼ tbsp
  • Fenugreek powder - ½ tbsp
  • Oil - 2-3 tbsp
  • Garlic - 1 (full)
  • Turmeric powder - ½ tbsp
  • Salt - 3 tbsp
  • Curry leaves - 2 – 3 twigs
  • Zeera - 1 tbsp
  • Pulses for Tadka (Popu ginjalu ) - 1 tbsp - *****Refer the bottom of the Instructions section
  • Dry red chili - 3
  • Tamarind - 2 tbsp
Instructions
  1. Wash the bitter gourd in water. After that, cut the bitter gourd into very small pieces and put them into a bowl.
  2. Then, take a bowl and pour oil into the bowl and let the oil heat.
  3. Then add the bitter gourd pieces into the oil and fry them deeply (until they are brown in color)
  4. Now, take the onion and cut it into pieces and fry the pieces.
  5. Then take tomatoes and cut them too. Boil the cut tomatoes along with tamarind.
  6. After this, add the fried onion, boiled tomatoes, garlic, into mixer and mix them into paste.
  7. Now, mix the fried bitter gourd pieces with the paste.
  8. Add turmeric powder, fenugreek powder, salt and red chili powder to the bitter gourd pieces mixture.
  9. Take another bowl and add oil into that, let the oil heat.
  10. After the oil heats, add popu ginjalu( Pulses for tadka)*****, jeera, mustard, curry leaves and fry for a minute.
  11. Add the mixture to this and mix it properly.
  12. With this your kakarakaya pachadi is ready to be served.
  13. NOTE :
  14. Please note that you can even use tamarind or lemon for the taste. Kakarakaya pachadi can be eaten with rice for lunch or dinner.
