On my visit to Ambur, a nondescript town in Tamilnadu on the Bangalore Chennai highway, I tasted one of the best biryanis in South India. The “Ambur Dum Biryani”. This town is famous for its leather industry and biryanis. You can find many shops serving Ambur dum biryani in Southern India.According to the locals the best Ambur Dum Biryani is served during functions as well as at homes.You can taste the Ambur Dum Biryani at the Star Ambur biryani hotel or Rahmaniya hotel for an authentic taste. The properly cooked rice along with succulent and marinated mutton pieces, with a slight taste of local spices imparts the biryani a heavenly taste.It is a must try if you ever travel travel through Ambur. I managed to get the recipe of the Ambur Dum Biryani over a cup of tea from one of the cooks in the hotel.
The rice normally used for the preparation of Ambur Dum Biryani is “Seeraga Samba Rice”. If you are not able to get the Seeraga Samba rice then you can prepare the Biryani with the normal available basmati rice. Select the fresh and fine and tender mutton pieces for the preparation of Ambur dum biryani.
1 Teaspoon red chili powder ( add according to your spice tolerance
2 to 3 Teaspoons of home made garam masala
1½ Teaspoon salt or to your taste
Instructions
Marinate the Meat
Mix all the ingredients for marination to form a thick paste.
Apply the paste properly on the mutton pieces and keep it for marination
keep it in the fridge overnight for proper marination
Preparation of the gravy mix
In a pan add a teaspoon of oil and heat it. add cinnamon stick cardamom pod and close into it and let it crackle.Half of the onion chopped and saute for a while.
Add enough oil during the preparation of the gravy mix
Into the above sauted mix add ginger paste and garlic paste. saute for a while.
Now add red chilli into it and saute for a while without over-cooking it.
Have enough salt into the gravy.
Prepare the Mutton
Now add the mutton pieces tomatoes and remaining onions into the above gravy and mix well.
Saute it properly
Add more oil into it and semi fry the mutton pieces in the gravy.
Now add little water into the gravy and pressure cook the mutton pieces and gravy for another 15-20 minutes.
Mutton along with the gravy is ready.
Preparing the rice
In a vessel add rice and double the amount of water into it.
Cook the rice for about 5 minutes and drain out excess water if any.
The preparation time of the rice vary according to the quality of the rice .
Ensure the rice not over cooked and properly cooked.
Mixing and Prepare the Dum
Now in a thick bottom vessel. Layer the rice and mutton gravy alternatively. So that it forms layers of rice and gravy
Add ghee while preparing the layers.
Cover vessel with a lid and Make it a tight by pasting wheat dough along the sides.
Now keep a flat Pan in the stove and keep the vessel containing rice on the top of it.
Heat it for another 15 to 20 minutes so that the gravy and rice get mingled properly and the taste is consistent.
Remove it from this stove and Garnish it with finely chopped mint leaves and corriander leaves.
Serve it with raita and Brinjal curry
