Time for the preparation of Corn Salad: 30 Mins

Serving size of  Corn Salad recipe : 3

Ingredients for the preparation of Corn Salad

  1. Fresh corn separated from cob : 1 cup
  2. Red capsicum chopped : 1 tbsp
  3. Green capsicum chopped: 1 tbsp
  4. Onion cut in to fine rings : 2 tsp
  5. Celery stalk finely chopped : 1 tbsp
  6. Tomato diced : 1 tomato
  7. Lemon Juice : 2 tsp
  8. Fresh Cucumber diced: 2 tbsp
  9. Salt as required
  10. Chili flakes : As per your spice tolerance
  11. Oregano: As per your requirements
  12. Basil leaves : 3 no
  13. Coriander leaves finely chopped  : 2 tsp
  14. Raw mango chopped in small : 2 tsp
  15. Crushed black pepper : 1/2 tsp (or as per requirement)
  16. Olive Oil : 1 tbsp
  17. Olives : 3 sliced in rings

Direction to  prepare the  Corn Salad

  1. Blanch the corn without over cooking it.
  2. In a small bowl, whisk Lemon Juice,Salt, Chili flakes, Oregano, Crushed black pepper and Olive Oil to prepare salad dressing and set aside.
  3. In a large bowl mix the remaining ingredients like corn,capsicum,Onion, Olives, Celery stalk, Tomato,Cucumber, leaves and raw mango.
  4. Add the Salad sauce in the bowl and toss it to coat properly.
  5. Sprinkle shredded cheese if required before serving.
