Chikkudukaya Vepudu or Broad Beans stir fry
The Main ingredient
  • 250 Grams of broad beans / Chikkudukaya
The tastemakers
  • One Onion chopped in to small
  • 2 Green chilies silted and chopped
  • Two Stems of Curry leaves
  • Six Garlic cloves
  • One Teaspoon Mustard seeds
  • 1-Teaspoon cumin seeds
  • Salt as per your taste
  • 3 tablespoon of vegetable/groundnut oil or any oil of your choice
The Indian Spices
  • 1 Teaspoon Kashmiri red chili powder
  • ½ teaspoon of turmeric powder
  • Coriander leaves
Prepare the broad beans
  1. Clean and remove both the edges of the beans.
  2. Cut in to one-inch pieces.
  3. In a pan add some water, add salt and bring it to boil.
  4. Toss in the broad beans in to it and cook until it is tender.
  5. Cooking time varies between 5 to 10 minutes depending on the toughness of the skin of the beans.
  6. Drain the water and keep the boiled broad beans aside.
Spice up the Beans
  1. In a pan add oil and heat it.
  2. Add cumin seeds and mustard seeds in the hot oil. Allow it to splutter.
  3. Toss in onions, green chili, curry leaves and coriander leaves
  4. Sauté until the onion is translucent, approximately for 5 minutes.
  5. Now add the broad beans on to it and sauté for approximately 10 minutes in low to medium flame.
  6. Add garlic and red chili in to the pan.
  7. Sauté for another 7 to 10 minutes in low to medium flame.
  8. Ensure the ingredients not burnt.
  9. Reduce the heat and add some more oil in case it is about to get burnt
  1. Transfer it to a serving bowl
  2. Garnish it with some coriander leaves.
  3. Serve it hot with chapattis or steamed rice.
