Ingredients
  • Ingredients for Dum biryani
  • ½ kilogram of rice
  • ½ kilogram of mutton cut in the curry pieces
  • Around 100 ml of refined oil
  • 1 tablespoon of ghee
  • 25 grams of curd
  • 150 grams of tomato cut into 5 pieces
  • 200 grams of onion finely chopped.
  • 1 cinnamon stick
  • 2 cardamom pod
  • 2 Cloves
  • 1 Bunch of coriander leaves
  • 1 bunch of mint leaves
  • ½ lemon juice
  • 2 green chillies
  • ½ teaspoon red chili powder
  • 50 grams of garlic made in to paste.
  • 50 grams of Ginger made in the paste
  • salt as per requirement
Ingredients for Marinating the Mutton
  • 1 Tablespoon fresh ginger paste
  • One Tablespoons lemon juice
  • 1 Tablespoon garlic paste
  • ½ Cup plain hung curr/thick yogurt
  • ½ Teaspoon of Turmeric powder
  • 1 Teaspoon red chili powder ( add according to your spice tolerance
  • 2 to 3 Teaspoons of home made garam masala
  • 1½ Teaspoon salt or to your taste
Instructions
Marinate the Meat
  1. Mix all the ingredients for marination to form a thick paste.
  2. Apply the paste properly on the mutton pieces and keep it for marination
  3. keep it in the fridge overnight for proper marination
Preparation of the gravy mix
  1. In a pan add a teaspoon of oil and heat it. add cinnamon stick cardamom pod and close into it and let it crackle.Half of the onion chopped and saute for a while.
  2. Add enough oil during the preparation of the gravy mix
  3. Into the above sauted mix add ginger paste and garlic paste. saute for a while.
  4. Now add red chilli into it and saute for a while without over-cooking it.
  5. Have enough salt into the gravy.
Prepare the Mutton
  1. Now add the mutton pieces tomatoes and remaining onions into the above gravy and mix well.
  2. Saute it properly
  3. Add more oil into it and semi fry the mutton pieces in the gravy.
  4. Now add little water into the gravy and pressure cook the mutton pieces and gravy for another 15-20 minutes.
  5. Mutton along with the gravy is ready.
Preparing the rice
  1. In a vessel add rice and double the amount of water into it.
  2. Cook the rice for about 5 minutes and drain out excess water if any.
  3. The preparation time of the rice vary according to the quality of the rice .
  4. Ensure the rice not over cooked and properly cooked.
Mixing and Prepare the Dum
  1. Now in a thick bottom vessel. Layer the rice and mutton gravy alternatively. So that it forms layers of rice and gravy
  2. Add ghee while preparing the layers.
  3. Cover vessel with a lid and Make it a tight by pasting wheat dough along the sides.
  4. Now keep a flat Pan in the stove and keep the vessel containing rice on the top of it.
  5. Heat it for another 15 to 20 minutes so that the gravy and rice get mingled properly and the taste is consistent.
  6. Remove it from this stove and Garnish it with finely chopped mint leaves and corriander leaves.
  7. Serve it with raita and Brinjal curry

You can use Chicken or beef for the preparation of Ambur Dum Biryani
