Spinach leaves rolled in spiced up batter and cooked in slow steam

  • 9 clean and full spinach leaves
  • One and half cup gram flour or besan
  • One teaspoon of wheat flour which is optional
  • 3 teaspoon of grated jaggery
  • 2 teaspoons of tamarind pulp (Imli)
  • Salt as per requirement
  • one and a half teaspoon of a red chilli powder
  • quarter teaspoon of turmeric powder
  • half teaspoon of green chilli paste
  • half teaspoon of ginger paste
  • one teaspoon of dry coriander powder
  • half teaspoon of Garam Masala
  • half teaspoon of lemon juice
  • 2 tablespoon of chopped coriander leaves
  • one and a half teaspoon of oil of your choice.
  • One teaspoon of mustard seeds
  • one and a half teaspoon of sesame (til) seeds..
  • 1 teaspoon of asafoetida
  • one teaspoon of grated coconut which is optional
  • enough chopped coriander leaves for garnishing
  • Few Coriander seeds
Preparation of batter
  1. The initial step is to prepare batter for Palak leaves. In a bowl add the gram flour , Wheat flour enough of salt, turmeric powder, red chilli powder, coriander powder, green chilli paste, ginger paste jaggery, Garam Masala, lemon juice, tamarind pulp, coriander leaves, and quarter cup of water,
  2. Mix all the ingredients with hand or a spatula To form a thick paste and keep it aside for atleast 5 minutes. Your batter mix is ready.
Preparation of spiced up Palak / spinach leaves bundle
  1. On a cutting board spread 1 Palak leaves properly. .
  2. Applying one layer of previously prepared better on to this Palak leaf
  3. Now keep another clean leave on top of this
  4. Again apply 1 layer of batter on to this new leaf.
  5. Keep the third leave on top of this and again apply batter on to this.
  6. No role this leaves as above in the picture and if required by it with an organic thread .
  7. Now prepare all the remaining leaves in similar fashion which is a bundle of 3, which is sandwiched in between the leaves..
  8. Now you have three bundles of sandwiched palak leaves.
Final preparation
  1. Now steam all these 3 bundles for around 20 minutes. until the leaf changes its colour slightly.
  2. Let it cool for some time . Now cut the sleeves into medium kick round discs.
  3. No heat the oil in a bottom span and splutter mustard seeds..
  4. Now add sesame seeds,, coriander seeds and asafoetida into it
  5. Add the round Cut Patra leaves sandwiched between batter into it and saute till it is slightly crispy.
Garnish It and Serve it
  1. Now transfer it into serving bowl and garnish it with grated coconut and coriander leaves.
