The best recipe of Golden fried corn

  • ¾ teaspoon of Ginger Garlic paste
  • Corn kernels : 200 gm
  • Salt as per requirement
  • Half teaspoon chili powder
  • Half teaspoon pepper powder
  • Dried Shallots 2 teaspoon
  • Corn flour 2 teaspoons
  • 2 tablespoon of Maida or All-purpose flour
  • one tablespoon of rice flour
  • egg white : 2 Eggs
  1. Get the best corn from the market, probably the yellow ones. Carefully separate the corn from the corn cob and keep aside.
  2. In a bowl mix Ginger Garlic paste, salt, chili powder, pepper powder, dried shallots and two teaspoons of beaten egg ( Optional for a vegetarians.).
  3. Add water and make the batter in the consistency of dosa batter (towards watery side)
  4. Add corn kernels in to it and coat the kernels with the batter properly so that all the sides of the corn is properly done.
  5. In a separate bowl add 2 table spoons of corn flour, 2 tablespoon of Maida or All-purpose flour, one tablespoon of rice flour. Rice flour give extra crunch for the dish.( Add egg white which is optional) Mix it properly. Covering mix is ready
  6. Now add the marinated corn little by little to the covering mix.
  7. Ensure that marinated corn is properly coated with a layer of flour. Flour coating is an important part of the preparation and ensures the corn kernels are separate from each other and coated properly. To remove excess of flour, sieve the corn using a colander.
  8. Option 1 : Fry
  9. Now, in a frying pan heat the oil and add the corn kernels. Cover it with a lid as the corn pops and oil may splash on you. Once popping stops, open the lid and fry for some more time till it is golden brown in color. Using a slotted spoon, carefully remove corn from the oil and keep in a tissue to get rid of the excess of oil. Remember to give some time to remove the excess of oil from the corn while removing from oil. I personally prefer the fried ones.
  10. Option 2 : Bake
  11. Alternatively as a healthy option, bake the corn in an oven at medium temperature for around 20 minutes.
  12. Garnish the corn with freshly cut onion, thinly cut coriander leaves, chaat masala and some pepper powder and serve hot.
