Cucumber Khichadi

Serving Size: 2

Ingredients:

  1. Cucumber – 1 big
  2. Thick Curd – 1 cup
  3. Salt – to taste

 

To grind to a coarse mixture:

 

  1. Green Chilli – 1
  2. Grated Coconut – 1/3 cup
  3. Mustard Seeds – 1/8 tsp
  4. Jeera – 1/2 tsp

 

To temper:

 

  1. Coconut oil – 2 tsp
  2. Mustard Seeds – 1/2 tsp
  3. Red Chillies – 1 broken
  4. Curry leaves – a small sprig

 

Directions:

  1. Wash cucumber, peel off the skin and remove the seeds. Chop them into bite sized cubes.
  2. In a kadai boil water add cucumber with required salt…Just cook till it becomes dry,Set aside.Grind the ingredients listed under ‘to grind’ to a semi coarse paste.
  3. Add the coarse paste to the cucumber and mix well.Saute till raw smell leaves.Switch off. Add salt and whisk curd.
  4. Add curd to cucumber mixture and give a stir.Temper the items in coconut oil and pour the seasoning to the pachadi.Adjust salt if required.
  5. Serve chilled with any variety rice.
