Creole Loaf Cake

Serving Size: 2-4

Ingredients:

  1. 2 cups sugar
  2. 1 tsp. vanilla
  3. 1/2 cups oil
  4. 2 eggs
  5. 2 cups flour
  6. 2 tbsp. cocoa
  7. Dash of salt
  8. 1/2 cup buttermilk
  9. 1 tsp. soda
  10. 1 cup boiling water

 

Directions:

  1. Mix first 3 ingredients. Add eggs. Sift flour, cocoa, salt and add alternately with buttermilk. Add soda dissolved in boiling water. Pour into greased pan and bake at 350 degrees for 35 to 40 minutes.

 

  1. TOPPING: Mix in saucepan 3/4 stick butter, 1 cup brown sugar, 1/2 cup canned milk, 1/2 cup pecans and 1 cup coconut. Melt. Pour over hot cake and place in oven until bubbling.
