Serving size of Cream of Tomato Soup recipe : 6 – 8

Ingredients to prepare Cream of Tomato Soup

  1. Tomatoes – 450 gms
  2. Pepper corn – 4
  3. Butter – 1/4 cup
  4. Bay leaves – 2
  5. Flour – 1/4 cup,
  6. Onion – 1
  7. Cream – 150 ml. 1 small tin
  8. Milk – 600 ml
  9. Water or white stock – 150 ml
  10. Seasoning – Salt, coriander leaves.

Directions to prepare Cream of Tomato Soup

  1. Heat one half of butter and sauté the sliced tomatoes and chopped onion together with bay leaf and pepper corns.
  2. Add water and simmer till quite soft.
  3. Put through seive. Heat the other half of butter and add flour.
  4. After some time gradually add milk, stirring continuously.
  5. Remove from fire and mix with tomato puree, add salt and pepper.
  6. After this while heating, do not boil as it will curdle. Add cream.
  7. Garnish as per your taste with coriander leaves , celery , carrots or any other vegetable
