The uniqueness of Chicken Achari tikka is that chicken pieces are marinated in yogurt and in a variety of pickling spices. Often Chicken achari tikka is served with coriander-mint green chutney. This is a common dish in many of the authentic Punjabi dabba and restaurants. Chicken Achari tikka has a unique tangy and pickles aroma from the spices which makes the mouth water. This dish needs a lot of ingredients but you cannot replace anything with its taste.
For preparing the achari masala, roast the Coriander seeds , Mustard seeds , Fennel seeds , Cumin seeds, Fenugreek seeds , Carom seeds , Kalonji , red chilies till it is slightly brown in low flame.
Once done add some Dry mango powder/amchur into it. Powder it in a mixer grinder coarsely (do not make it into a fine powder). Achari powder is ready
In a vessel mix the Achari powder, curd, Garam Masala, lemon Juice, Ginger paste, garlic paste and all the remaining ingredients to make into a nice paste. Add extra yoghurt/curd if necessary for the proper consistency of the paste.
Add chilly powder and mustard oil into it and mix properly.
Add chicken pieces into it and coat them properly for marinating and keep aside for next 2 hours.
Using Oven :
Preheat oven to 220 degree Celsius in grill mode. Place the marinated chicken on an aluminum sheet and grill for 10-12 minutes. Brush it with butter in and turn over the chicken pieces and again grill for another 10-15 minutes.
Total grilling time normally varies between 15 to 20 minutes depending on the crispness you need.
Using a Tandoor (Clay oven which uses charcoal):
Skew the chicken in a metal skewer . Grill the chicken for 6-7 minutes on the moderate heat . Brush melted butter in between and turn aside so that all the sides will be cooked properly.

Marinate the chicken properly to make it tastier which is otherwise bland. Marination ingredients will help to break down the chicken fibers and make the portion tastier and tender. So remember, always marinate your chicken with your favorite spices and salt as long as possible for a deeper taste.
Let the chicken rest for a while before serving. Doing so will help the juices and spiced to redistribute inside the chicken and the pieces will get a spicy flavor.
Brine the chicken well before the cooking. This will add moisture and flavor to the chicken pieces.Dissolve 1/2 cup of salt and 1/4 cup of sugar in one liter of water. Add the chicken pieces into it and refrigerate it for 2 -3 hours before the cooking.
