Chekkalu (Rice Crackers)

Serving size of Chekkalu : Five to six per person

Ingredients required to prepare Chekkalu :

Rice flour – 1 cup

Water – 1 cup

Green chilies – 2 to 3

Red chili powder – 3/4 tbsp

Jeera – 1 tbsp

Carom seeds – 1 tbsp

Chickpeas (halves) – 1 1/2 tbsps

Ghee – 1 tbsp

Curry leaves – 2 leaf lets

Salt – required amount

Oil – required for deep frying

Directions to prepare Chekkalu :

  • To prepare the Chekkalu, which is one of the recipe is festive cuisine of Andhra, we need to take a bowl and pour water into it. Then boil the water for some time.

  • Now was the green chilies and chop them into small pieces.

  • Mean while, take a wide bowl and add rice flour, required amount of salt, shredded curry leaves, small slices of green chilies, red chili powder, chickpeas, jeera, carom seeds, ghee and mix thoroughly.

  • Now pour the boiled water into the mixed flour little by little and mix.

  • Make it into dough which can be mouled into small balls.

  • After the dough is ready, apply oil to your hands and take little dough and mould it into a small ball.

  • Continue to make balls until all the dough is finished.

  • Then take a chapati presses and apply oil to it, Place a clean plastic cover with oil on one side of the press and put one small ball on top of the cover and then place one more cover on top of the ball and press.

  • Open the press to find a round small roti shaped dough.

  • Repeat the process until all the small balls are made into small rotis.

  • Then take wide bowl with heavy bottom and pour oil required for deep frying.

  • Let the oil heat. Once the oil is heated, add the small rotis to the oil and deep fry them until they turn light brown. Many can be fried at time depending on the size of the bowl.

  • Then remove them with holed laddle and transfer them to a bwol with tissue paper.

  • Then transfer them again to a container for storage.

  • With this your tasty Chekkalu is ready to be savored.

Note : Chekkalu may be served as snacks during social gatherings.

About : Chekkalu is one of the traditional recipes during festivals. It is also very good for health with its ingredients being nutritious.
