Challa Mirapakayalu (Curd Chillies) or Vattal Mulakku

Serving size of Challa Mirapakayalu : 4 to 5 per person

Ingredients required to prepare Challa Mirapakayalu :

Green chillies – 500 gms

Buttermilk – required to soak

Salt – required amount for taste.

Directions to required to prepare Challa Mirapakayalu :

  • To prepare Andhra famous Challa Mirapakayalu, we need to select the green chillies carefully. There should be fresh and healthy.

  • Wash the green chillies and dry them on a wide and neat cloth until all the moisture is dried.

  • Then slit each of them vertically, donot remove the stem.

  • Now take a bowl and pour buttermilk into it. It is good if the buttermilk is little sour.

  • Add required amount of salt to buttermilk and mix properly. Buttermilk should not be too thin.

  • After the buttermilk is mixed properly add the slit green chillies to it.

  • All the green chillies should completely soak in the buttermilk.

  • Now cover the bowl for three and let the green chillies soak in buttermilk for 3 days.

  • The color of the chillies will change after 3 days.

  • Then take them out of the buttermilk and squeeze them a little.

  • Take a dry cloth or wide plate and spread the squeezed chillies on that and dry them under sun for a day.

  • In the night add them to the left over buttermilk and soak them overnight.

  • Again in the morning squeeze the chillies and dry them under sun for a day and soak them again in the night.

  • Repeat the process until the buttermilk is completed.

  • Once the buttermilk is finished, spread the chillies on a plate and keep them under the sun daily until they are completely dried.

  • Then store them in a container.

  • Whenever required take few chillies and fry them in oil until they turn brown and serve them.

  • Your Andhra special Challa mirapakayalu is ready.

Note : Challa mirapakayalu may be served for lunch with other dishes such as sambar, rasam and pappu etc.

About : Challa mirapakayalu is one of the oldest recipes of Andhra cuisine.
