1 gill of milk (around ¼ pint or 0.14 litres of milk)
Directions:
Boil the carrots until tender
Drain and mash through a sieve
Add seasoning to taste
Make a thick white sauce with the corn flour, margarine and milk
Add the sieved carrot and leave to cool
Shape into croquettes
Roll in oatmeal
Fry in deep hot fat
Drain well and serve

Add finely chopped onion, garlic and carrots to a pan and saute for five minutes. Next add lentils, diced sweet potato and water and simmer for 30 mins. Mash and cool the mixture.
