Boondi Laddu

Serving size of Bundi Laddu : one or two per person

Ingredients for Boondi Ladoo :

Basen/Gram Flour/Chickpea flour – 1 cup

Sugar – 1 ½ cup

Cardamom powder – ¼ tbsp

Ghee (some preprations use Oil) – required to fry bundi

Dry fruits -4  tbsps

Directions required to prepare Bundi Laddu :

  1. To prepare Bundi Laddu, take a bowl and add chickpea flour to the bowl. Then pour water into the flour and mix it without leaving any lumps.

  2. The mixture should be flowy.

  3. Now take a bowl and add sugar and water into it. Stir until the sugar is melted completely.

  4. Cook the syrup for five minutes and check if the syrup is thick enough.

  5. Take a bowl and add oil into it. Let the oil heat.

  6. Once the oil is hot, take a slotted spoon and hold it above the bowl with hot oil and pour chickpea flour batter on top of it.

  7. As the mixture falls in the pan as the batter is fried it forms small balls which is bundi. Stir until the bundi turns golden brown in color.

  8. Now chop the dry fruits such as cashew nuts and almonds and add it to the syrup. Add cardamom also to the sugar syrup.

  9. Then add the fried bundi also and mix everything properly.

  10. Once the bundi absorbs the syrup, take some bundi mixture into yours hands and mould it into a laddu.

  11. Repeat the same step to make laddus from the whole mixture and dry them for sometime.

  12. Your tasty and sweet bundi laddu is ready to be eaten.

Note : Laddo may be served as sweet snacks. They also stay fresh for long.

About : Bundi laddo is famous in North India and some southern states like Andhra  and is often served in marriages and other social gatherings. It is also prepared during festivals as offering to Hindu deities.
