Thoran ( Bitter Gourd Thoran )is  traditional preparation of finely chopped vegetable in  spices and grated coconut. For the preparation of Bitter Gourd thoran very less oil is used  so is a healthy option than stir fry or other similar recipe. This dish is also called bitter gourd upperi in Malabar region. Thoran is an integral part of any Sadhya. A smooth mixture of bitter gourd in spiced up coconut. Coconut gives a very rich taste to the otherwise bland preparation and completely gives a different texture for the recipe.
  • 2 Bitter gourd grated or sliced in to very thin and small pieces
  • Half cup of sliced shallots/ Perl onions / Kunjulli.
  • 4 or 5 Green chilies slit and sliced in to small pieces.
  • One spring curry leaves.
  • Two or three red chilies.
  • 1 cup of grated coconut.
  • 4 to 5 cloves of garlic crushed.
  • Half teaspoon of grated cumin seeds or Jeera.
  • ¼ teaspoon of Turmeric powder.
  • ½ teaspoon of red chili powder which is optional.
  • 2 tablespoon of Oil.
  • Half teaspoon of Mustard seeds.
  • Salt as per requirement.
  1. Clean the bitter gourd and discard the seeds. Grate the bitter gourd or cut it in to very thin and small pieces.
  2. Make a mixture of red chili powder (optional), turmeric powder, salt and coconut and using hands or grind coarsely without adding any water.
  3. In a thick bottomed pan, heat the oil. Add mustard in to it and allow it to pop. Be careful while doing this as it can hurt you.
  4. Add cumin seeds and sauté for few seconds. Now add red chili and sauté for a while. Add shallots and sauté till it is light golden brown.
  5. Now add crushed garlic as well as curry leaves and sauté till the raw taste of garlic is gone.
  6. Add bitter gourd and mix it properly in to it and sauté for a while. Now add the coconut in to it and mic everything properly.
