Bitter Gourd Stuffed or Bharwa Karela

Bitter Gourd or Karela is one of the most nutritious vegetable and is available all around the season. It is also known as bitter melon. Here is the authentic recipe of North Indian, Punjabi version of  stuffed bitter gourd or otherwise known as stuffed karela or bharwa karela

Authentic Punjabi Bharwa Karela Recipe
Ingredients
  • Karela / bitter gourd : 8-10 small
  • Mustard : ½ tsp
  • Cumin seeds( jeera) : 1.4 tsp
  • Tomato : ¼ cup
  • turmeric powder : ¾ tsp
  • red chili powder : ¾ tsp
  • pure garam masala : ½ tsp
  • amchur powder / Dry mango powder : 1 tsp
  • fennel powder/saunf powder : ¼ tsp
  • onions : 2 medium sized, finely sliced
  • oil : 3 tbsp
  • coriander leaves : chopped for garnish - optional
  • salt: as required
Instructions
  1. Clean the Karela by rincing in water and remove both the edges a little.
  2. Slit the karela vertically in the middle and both the edges should be intact. Do not split it.
  3. Through the slit, remove the seeds Using hand or using a small spoon.
  4. Apply salt properly on the bitter gourd (both in and out ) and keep aside for another 20 minutes
  5. in a pan heat the oil splutter the mustard seeds add fennel seeds and cumin seeds/
  6. Add onion into it and And saute still it is translucent.
  7. Ginger and sort for few minutes. Add Turmeric powder ,amchoor, Chilly powdew, Garam Masala and coriander leaves
  8. Saute properly till the mixture is consistent leaves oil. let it cool.
  9. Fill the mixture in the slited bitter gourd properly and tie it with a tread .
  10. In pan heat the oil and deep fry the properly stuffed bitter gourd till it is brown all the sides.
  11. serve it hot with chapatis arise.
Notes
1) Scrape the outer side of the Karela or bitter gourd for reducing the bitterness. 2) The masala should be in a paste form for better results
