Bitter Gourd Curry : Here is a simple recipe of Bitter gourd curry which can be made easily. Bitter in taste but loaded with vitamins make bitter gourd a must for all ages. Below are the direct  benefits of Bitter gourd.

Bitter Gourd Curry Semi-fried bitter gourd in a tangy gravy of tomato and lot of spices Following Ingredients are required for Bitter Gourd Curry
Ingredients
  • 2 medium sized bitter gourd cot in to long stripes
  • 2 medium sized tomato cut in to fine pieces
  • 1 medium sized onion cut in to small pieces
  • 2 Green chilies slit and cut in to small pieces
  • 1 teaspoon red chili powder
  • One tablespoon of ginger garlic paste.
  • 1 table spoon of coriander powder
  • ½ tablespoon of cumin seeds or Jeera
  • ½ table spoon of turmeric powder
  • Quarter teaspoon of mustard
  • Enough salt to taste
  • Enough Oil to cook, Use minimum oil
  • Coriander leaves and curry leaves to garnish
Instructions
  1. Wash the bitter melon or bitter gourd and slice in to thin long pieces.Wash it in salt
  2. In a pan add two to three spoons of oil and fry the bitter gourd till it is light green and keep it aside.
  3. In the pan add little oil. Add mustard and jeera (cumin seeds) in the oil and splutter. Add green chilies and saute for a while
  4. Mix the onion and saute till the onion turns golden brown.
  5. next step is to add tomato and saute it properly till it is blended in the mixture properly
  6. Put ginger-garlic paste and turmeric powder in to it and saute till the raw smell is gone.
  7. Mix the prepared bitter gourd in to it and let it cook for a minute or two.
  8. Add red chili powder, coriander powder and enough salt in to it. Cook for a while
  9. Garnish with curry leaves or coriander leaves
  10. Serve it hot with chapatis, rice or any main dish of your choice.
