Beetroot Halwa is one of the best recipe just like Gajar ka Halwa or Sooji ka Halwa. Beetroot Halwa has a rich and natural color which is unique.This dish can be given to kids who are reluctant to have vegetables. This is often prepared during festiwal seasons like Ramzan or Diwali. This one of my favorite sweet dish
In a pan and fry cashew nuts till it is golden brown and keep aside.
In another vessel cook the grated beetroot properly till the raw smell of the beetroot disappears. Let it cook properly. This is important else you will get a raw taste of the beetroot
Cook the above beetroot mix in milk with the help of a pressure cooker till 1 whistle. Let the steam weans out by itself after removing from the flame.
Now open the lid and cook till it is almost dry
Add condensed milk as well as sugar and cook for another two to three minutes.
Add the cardamom and cashew nuts And cook until it reaches the consistency of halwa.***
Remove from the flame garnish it with Almonds and pista
Serve it hot or cold
*** Please note that Halwa tightens a little more after removing from the flame. Almond pista and cashew nuts gives the halwa a rich taste. The quantity of the sugar can be adjusted as per your sugar tolerance. Use Ghee to fry cashew nuts and remaining Ghee can be used to cook the beetroot.
