Thoran or Porial ( Carrot Beans Poriyal) is traditional South Indian recipe.It is an integral part of any vegetarian meal. Thoran or Porial is a dish where chopped vegetables are sauted with grated coconut, curry leaves as well as mustard seeds and briefly cooked in fire. This recipe uses very less oil and is healthy. To prepare cabbage thoran or cabbage poriyal instead of beans add same quantity of cabbage. Similarly to prepare beans thoran or beans poriyal instead of cabbage add same quantity of beans
Splutter mustard seeds in a pan and add finely cut onions(offcourse with oil). Fry till it turn golden brown.
Add crushed garlic in to the pan let it cook till it the raw smell of garlic is gone.
Add remaining ingredients except Carrot and beans in to the pan and fry for 2-3 minutes in low flame.
Avoid coconut getting browned
Add beans and carrot and combine everything
Sprinkle some water(2-3 spoons), cover and cook for 5-10 minutes approximately in low flame
Stir in between so that it should not stick to bottom.
A pinch of Cumin(jeera) can be added if required which is optional
