Remove the leaves and stalks from the cauliflower and place them side by side in a shallow dish.
Add lime juice, 1/2 tsp salt and 1 cup water.
Boil till they are three-quarters cooked. Then remove from water.
Save this water for stock.
Heat 1, 1/2 tbsp ghee, fry the ground spice and cook till golden in colour.
Add cauliflower, water and the whole all spice and cook till gravy is thick.
In an ovenware dish, arrange the cauliflowers.
Pour the thick gravy over them.
With a fork, lightly prick the cauliflowers all over to let gravy penetrate into them.
Bake in moderate heat for 15 minutes.
Sprinkle a little grated cheese, chopped coriander and crushed cashew nuts over, before serving.
