Badam pista barfi is quick to prepare and healthy too. The main ingredients are is made with almonds, pistachios and khoya (mawa or evaporated milk solids).We can easily make it at home. If you make khoya also at home then it will be a more healthy and sweet. Having sweet burfi in winders are really yummy and I miss the home made barfi my mother makes. Here is the recipe of a yummy, healthy and easy barfi.
Heat the pan and put almonds and pistachios for 2 to 3 minutes.Stir continously.
At the same time, grease a plate with ghee.
When almonds and pitachios become cool then put elachi in it and grind all these in a mixer. Don't make a very thin powder.
Put the grated khoya in the same pan and add sugar in it. Stir continousely and flame should be low.
When you see that khoya has been cooked, swich off the flame otherwise it will become dark brown or black.
Now remove the pan from the gas and mix it properly.
Now put it in the greased plate and level it at about ½ inch height.
Now decorate the barfi with sliced and chopped almonds and pistachhios.
Cool it at room temprature. If it becomes cool then can cut it in the shape of barfi with the help of knife
Serve with a glass of milk. It is very tasty and healthy..
This barfi can stay well for 3 to 4 days in cool days. In summers keep in the fridge.
