Ada Manga Pickle | Dry Mango Pickle

Ada Manga Pickle or dry mango pickle is one of the best pickle I ever had and the very name. Dry Mango Pickle brings water in to my mouth. Ada manga is basically the dried mango pickle which can be used even when the mango season ends. Ada mango pickle is usually prepared for the best use during the lean rainy season followed by summer : the mango season. Mangoes are sliced and marinated with chilly powder and salt. and dried for 10 to 15 days . This Ada Manga Pickle is tasted differently from the normal mango pickle. Ada Manga Pickle may last till the next mango season and can be used with almost any type of food like rice chapattis, parathas or even just like that. Here is a recipe which I jotted down from my Grand Mother.

  • Dried Mango Slices - 2 cup
  • Ginger: 1 tbsp
  • Garlic: 1 tbsp
  • Mustard seeds - 1 tsp
  • Chilli Powder: 1 tbsp
  • Fenugreek Powder: ¼ tsp
  • Asafetida powder: ¼ tsp
  • Gingelly Oil: 1 tbsp
  • Boiled water: ½ cup
  • Vinegar: 2 tbsp
  • Turmeric powder : 1 pinch
  1. First step is to soak the mango in water for nearly 1 hour
  2. Take a pan and add gingelly oil and heat it. Splutter the mustard seeds in it
  3. Add Ginger and garlic in to it and saute till the raw smell of Ginger and garlic is gone and colour is light golden brown.
  4. pour enough oil and saute the remaining ingredients Chilly Powder, Fenugreek Powder, Asafetida powder and turmeric powder.
  5. Mixlittle water and boil it to form a thick gravy. Add mango pieces in to it and remove from flames.
  6. Let the pickle cools. Add the vineger in to the pickle and store in a tight jar
  7. Keep the pickle for a week in a tight jar and use it after that for the best taste.
