American Date Fudge Cake

Serving Size: 2 servings

Ingredients:

  1. 110g butter
  2. 130g brown sugar
  3. 20g cacao or cocoa powder
  4. 60g golden syrup
  5. 1 egg
  6. 140g self-rising flour
  7. 100g pitted dates
  8. 100g dark chocolate
  9. 60g roasted macadamia nuts

For icing.

  1. 100g dark chocolate
  2. 50g sour cream

Directions:

  1. Prepare a 20cm square cake tray with baking paper and preheat oven to 160deg.
  2. Place flour, dates, chocolate and nuts in bowl and chop on Speed 7 for 5 seconds.  SET ASIDE.
  3. Add butter, sugar, cacao and golden syrup to bowl and melt for 3 minutes at 60deg on Speed 2.  Scrape down the sides.  Allow the bowl to cool down to 37deg.
  4. Add flour and egg and mix on Speed 2 for 20 seconds.  Pour into tin and bake for 20-30 minutes (until it comes away from side of tin).  You may need to cook for longer, my oven cooks at a high temp.  Allow to cool in tin.
  5. Add another 100g dark chocolate to bowl and grate on Speed 7 for 3 seconds.  Melt for 2 minutes at 50deg Speed 2.  Add 50g sour cream and mix on Speed 4 for 10 seconds.  Scrape and repeat.  Spread over the top and add extra chopped nuts (optional).
